Preparation time 20 min. + soaking time approx. 4 hours

1/2 dl of cashew nuts
1 dl of sun-dried tomatoes
5 dried apricots
2 dl of water
750 g of fresh ripe tomatoes
3 cloves of garlic, pressed
a bunch of basil
dried oregano and thyme
black pepper
red pepper powder
1/2 – 1 tbsp. of miso paste
1/2 tsp. of onion powder
1/4 tsp. of ground coriander
a couple of drops of Tabasco
2 tsp. of balsamic vinegar
Grated rind of half a lemon
quality salt depending upon the amount of miso

Soak the cashew nuts, sun-dried tomatoes and apricots for approx. 4 hours or overnight. Dice the fresh tomatoes. Put all ingredients, including the soaking water, in a blender. Power mix increasing the revolutions and finally at full power for about 60 sec. Use the pulse function for easy mixing. The mixture may remain a little rough. Taste before adding the salt. Serve as a side dish, for example, with pasta or cooked vegetables.

Tip: By adding liquid, you will get a delicious fresh tomato soup.
